Matt Moran snaps up Kokoda and delivers a signature cerviche at Sheraton Fiji.

One of Australia’s most celebrated chefs and restaurateurs, Matt Moran, took his iconic paddock-toplate philosophy to the islands of Fiji in March.

The partnership with Marriott International Fiji saw Moran take over the kitchen for two nights at Sheraton Fiji Golf & Beach Resort and Fiji Marriott Resort Momi Bay to launch his special menu inclusion.

“Fiji is such a popular destination among foodies, and it’s easy to see why. With an abundance of crisp vegetables, tropical fruits, and the freshest line-caught seafood it’s hard not to create spectacular dishes. It was great to experience Fiji, tour the resorts’ own gardens and deliver something extraordinary to their guests.” Matt said.

One hundred and fifty guests across the resorts in the popular island paradise at Denarau enjoyed an exclusive three course dinner designed and hosted by Matt himself – highlighting local produce and ingredients, including some directly from the resort’s kitchen gardens.

Moran launched a snapper ceviche, inspired by Fiji’s worldrenowned Kokoda – continuing on the menus at Tatavu Grill & Bar at Sheraton Fiji Golf & Beach Resort and Fish Bar at Marriott Resort Momi Bay until the end of August.

The specialty dish using Fiji’s freshly caught seafood will be delivered by the restaurant’s in-house Chefs and culinary experts and available to all guests dining at the selected restaurants.

With a career spanning over 30 years, Moran is known throughout Australia for celebrating local producers and ingredients. Moran relayed to guests how thrilled he is to be partnering with the world’s largest hotel chain to deliver a memorable dish for Marriott International Fiji guests.

“We are thrilled that Matt agreed to have the snapper ceviche on the menu at both Tatavu Grill & Bar and Fish Bar for the next six months.

“Beyond this menu addition and in keeping with Marriott’s ongoing commitment to upskilling our teams, our associates from both restaurants have been fortunate to be exposed and also learn from the likes of Matt Moran’s calibre,” Chadha said.

“Matt created a memorable experience that aligned perfectly with our ethos and core values here at Marriott. We aim to deliver world-class hospitality and set new standards in our dining experiences.”

The revitalised Tatavu Grill & Bar forms the dining centrepiece of the multi-million-dollar newly refurbished Sheraton Fiji Golf and Beach Resort on Denarau Island. Offering guests a barefoot luxury dining experience where waves lap the sandy shore, the restaurant features a multilevel open vertical grill, custom made for the resort.

Situated on the tranquil shores of Momi Bay, the Fish Bar restaurant specialises in freshly caught seafood and succulent meats paired with the locally infused flavoured Fijian salt – a highlight of the dining experience at Fish Bar. The resort sits on the shores of Momi Bay providing panoramic ocean views and striking sunsets.
